Inaugural Whisky Release - Dusky

It's beyond exciting to finally be releasing our first ever NZ made whisky. This was the very first thing ever made at Herrick Creek. 

It started with malted corn, malted wheat, and malted barley, and was mashed in two small batches and put into small 5 gallon new American oak barrels. They sat there for nearly a year before being blended together in one 10 gallon new European oak barrel.

The result is totally unexpected. It's not quite a Bourbon profile, but it's not quite a Single Malt profile either. In fact, this is technically a Single Malt Corn Whisky by New Zealand definitions. The nose is sweet and offers coffee and spiced cake. The colour is deep and rich. 

This is the first Corn Whisky made and aged in New Zealand to be released. We're really proud of how it turned out and can't wait to share our other whiskies in the future. 

As we're a small batch distillery, these whisky releases will be few and far between for a long while. The profiles may change batch to batch and we are constantly playing with mash bills while we're in this small stage of production. 

This batch has only about 90 bottles, and once they are gone, they are gone.
