Why We’re Ending Our Whisky Program (And What Comes Next)

We didn’t expect to write this post.

When we launched Herrick Creek, the dream was simple: make great moonshine, craft a few gins, and slowly build a whisky program that would become our legacy. We did all of that. We distilled the spirit, filled the barrels, waited patiently, and then released some really special whiskies.

But here’s the truth: the whisky hasn’t sold the way we hoped. And sitting on ageing stock ties up the cash we need to make more of what actually does sell — our moonshine.

So we’re making a big decision.

We’re ending our whisky program and going all-in on what we love most — bold, unapologetic, corn-based New Zealand moonshine.

This doesn’t mean we regret making whisky. We’re proud of every barrel we laid down and every bottle that went out the door. But running a distillery as a one-man band means making hard calls. Right now, moonshine keeps the lights on, the still hot, and our customers happy. So it’s time to double down on what works.

The Campaign

To make this pivot possible, we’re launching a crowdfunding campaign. It’s a chance for you to:

  • Grab the last of our rare whiskies — including small bottles, giant 2.5L jugs, and even full barrels.

  • Be part of our next chapter by supporting the moonshine side of Herrick Creek.

  • Join us for tasting nights, get your name on a barrel, or just back the shift because you believe in what we do.

Every reward helps fund the next production runs of our moonshine range — Original Corn Mash, Maple, and Apple Pie. You’re not just helping us clear space, you’re investing in a new direction.

Why Now?

Because we don’t want to sit on great whisky for another year hoping it eventually moves. We want to take bold action. We want to keep creating. And we want you with us for the ride.

We’ve met so many of you at the Christchurch Farmers Market, at The Juniper Collective, and online. You’ve supported us through experiments, changes, and challenges. This is one more chapter — and we think it might be the best one yet.
