70% Corn, 15% Wheat, & 15% Barley - 100% Malted
Made from malted yellow corn, malted barley, and malted wheat, this South Island Single Malt Corn Whisky is made and aged entirely by us, here in Christchurch. Made from 100% New Zealand grains and aged in Christchurch for 2 years.
Batch DS4 was aged in a ex-Rye Whisky, 10 Gallon barrel.
This release is exclusive to Herrick Creek and will not be sold anywhere else - not even The Juniper Collective.

What is Single Malt Corn Whisky?
Single Malt refers to two things: 1. Made in a single distillery; 2. using 100% malted grains. In New Zealand, we can add the grain at the end if the main grain is different to barley. In our case, this was made entirely at Herrick Creek (Single), from 100% malted grains (Malt), using 62.5% malted corn (Corn), and aged at least 2 years in an oak barrel (Whisky).

What is New Zealand Whisky?
Made entirely from cereal grain, New Zealand Whisky must be mashed, fermented, distilled, and aged in New Zealand for at least 2 years. "Corn Whisky" has no official designation in New Zealand, but we want to champion it as a whisky made from at least 51% corn.
