For this whisky, we had to find seed years beforehand and spent a couple of years propagating seed at home. When we finally planted a field of it, everything was done by hand. Each seed was poked into the ground by the owner/distiller, Tom, on hands & knees.
Each cob was hand harvested and air dried before being kerneled by hand as well.
This is a whisky labour of love. It's a pure expression of the Waimakariri area it was grown in, and it's a one-off. We don't have any plans to grow this variety again.
